pre-opening w sydney
Escape to the rooftop oasis 29/30 of W Sydney in the middle of Sydney. This is one of Cocktail Professor's latest project where we helped with the bar concept, consultancy and training during the pre-opening of all the venues of W Hotels in Sydney.
An exotic Australian signature cocktail menu, where we blend Australian local produce with exotic products from around the equator. All drinks tell their own perky story about Sydney. ’The B**** Of Bondi Beach’ is a drink inspired on the unicorn street art on Bondi Beach, the ’Shark Biscuit’ cocktail is a reference to the nickname Australian have for a beginner -not so skilled- surfer, and drinks as ‘Aloe & G’Day’ and ‘Abso Bloody Luttely’ are a nod to the Australian slang. A new sophisticated way of serving you your summer cocktail, but also learn guest more about the beautiful city they are visiting.

Behind closed doors, Bar Botan takes you to a different world. Blending nature-inspired design with an adventurous & curious craft bar atmosphere. The interplay of lighting with the interesting shaped shades from the leaves of the plants will also accentuate the cozy bar experience and create a center stage for both the botanicals and the bartenders.
With the ambition to reconnect guests with nature, we have a contemporary and sensory approach. Botanicals are the star of the show in all ways. Celebrating all fascinating wonders behind nature; their medicinal powers, cultural stories, beauty, and expressive flavors. Just around us, there are so many ingredients and resources from nature. We love to work with all of them; herbs, fruits, flowers and vegetables. And all parts of them; everything from root to shoot.
Using advanced techniques in our botanical lab to extract their most versatile flavors and qualities. Creative ground-breaking cocktails that bring guests on an adventurous multi-sensory journey showing them all miraculous features of nature. Bartenders are the craftsmen and the botanical bar is their stage. Focussing on all things nature means to serve 100% botanical based drinks at every opportunity, but also to advocate the big responsibility to our surroundings and ‘root to shoot’ drinks (drinks with a zero waste goal in mind).
Bar concept development + the interior design for the venue is in collaboration with our sister design agency www.studio-numen.com. Cocktail Professor was responsible for the bar concept, bar design (including logistic design) and bar consultancy.

It’s never just about the drink. The hospitality, storytelling, techniques, bar design, tickling of the senses, menu design, the labels on the pre-batched bottles, the range of drinks on the menu and so on… Into the smallest details of the bar and the drinking experience. Think about a strong message that you want to convey to your customers and perfect this.
This was for a project, Off The Wall in Dubai (part of the Indigo Hotel). Cocktail Professor collaborating with our sister design agency, Studio Numen, we also curated the concept, branding, and collateral design for this remarkable venue. We can help from the bar concept to the bar design, from the menu creation to the bar trainings.

The Social Club. Creating an exceptional place. A social club where you feel welcome and be part of an exclusive community. Taking inspiration from the mystery of old-school member clubs and reframe them to something new, open for everybody and open to new ideas. Although it’s an open, inviting, and comfortable place, it’s also a place you have to know about. About its secrets, its mysteries and its rituals. An extraordinary community home for like-minded creatures.
It’s our reframed way to look at a bar experience, being side by side next to the bartender. Inviting guests to go on a journey. The communal bar with open cocktail workstations gives the feeling of visiting someone’s home and joining this person at the bar. Explore new flavours, new friends, and new activities. Not simply asking the guests to sit and just consume, but we ask them to be a part of and co-create in the bar. By literally asking them to stir their own cocktail, invite them to lean in and join the process of bartending.
In the venue you can also find our modern take on a prestigious library, it’s one with dozens of ‘Old-fashioned cocktails’. In the communal library, guests are invited to try and taste all our versions of the old-time-favorite classic cocktail. A round-shaped design center piece where we will play with repetition and lots of eye for detail. On the menu, we’re presenting 20 different versions of an Old Fashioned cocktail. Some are made with very exclusive whiskey, others with an infusion, a fat-washing, or based on a wood-layered gin. The Old Fashioneds are here to go explore and taste all different versions, from the menu or in the library.

Cocktail Professor has developed a signature Porsche cocktail. Non-alcoholic drink that still exudes the quality and innovation that Porsche stands for.
Taking the Porsche brand values and translate it to a drinking experience. We used champagne sparkles as a symbol for the prestige experience. Using quirky lavender bitters and tonka beans for the creativity and passion for details, as well as creating a bit of profound tasting notes one would not expect in a non-alcoholic drink. By preparing it on the basis of agave and vinegar, it even gives it a sporty touch.
A beautiful red fire red drink with a red yellow garnish made from a recycled lemon peel and watermelon fruit leather. The garnish has an iconic shape that symbolises the flaming Porsche engine.

Full cocktail craftsmanship, but without the use of any alcohol. For our team at Cocktail Professor it was super interesting to work on a fully non-alcoholic project in the Kingdom of Saudi Arabia. Looking at the future we think it’s something to watch out for. We proudly present you our project for Irori, a Pan Asian restaurant in Riyadh (KSA).
Suiting the Pan Asian cuisine, we looked at the one thing all these Pan Asian cultures have in common: the reference back to ’the elements’ and used the elements ‘wood’, ‘fire’, ‘earth’, ‘metal’ and ‘water’ as a beverage concept in the cocktail menu. Taking inspiration from these Pan Asian cultures, every drink comes with a story and is made of natural products from that cuisine. As this is a non-alcoholic menu, it’s difficult to create in drinks the serious kick you normally find when using spirits, but by searching for serious unexpected flavour combinations we present at IRORI a list of non-alcoholic drinks with super expressive and refined flavours and aromas. Using modern cocktail techniques to present a contemporary non-alcoholic fine drinking experience.
With many hospitality development that is currently happening in KSA, like the Red Sea Global project, NEOM (Sindalah, The Line and Trojena) , it’s an exciting future and we can’t wait to see what’s happing next.

The Summer Club. Craft cocktailbar experience in laidback outdoor vibes.
For this project we worked closely with our sister design company Studio Numen. First a strong concept, then the designs and operations. Designing the perfect day of summer. A Summer Club where it’s all about comfort and pampering. Come back to your senses & interact with your surroundings. An ideal blend of bohemian design and laidback luxury.
Finding a contrast between the laidback outdoor vibes and a high-end craft cocktailbar. The bar not only is literally placed in the center, but also places a center role. It is designed to attract attention and exude craftsmanship and professionalism to contrast the usual service associated with outdoor bars. In this new setting a 'high-end craft-bar-experience' and 'laidback vibe' come together.
No pitcher Mojito’s and frozen blue Hawaiians drinks, but a sun-soaked hideaway for craft drinking. An exotic signature cocktail menu creates a - candlelit shrine - to tropical drinking. It’s a new sophisticated and authentic way of serving you your summer cocktail. Refined in presentation, refined in flavour profile, but still that super-refreshing cooling pleasure. Think about grilled pineapple with agave nectar, roasted watermelon seeds infusion, or fat washing with peanut oil — applying finesse to meticulously prepared libations in the middle of a hot, humid summer day. Wildly creative signature cocktails or summer-twisted classics like a ‘coconut aged Negroni’ or a ‘corn colada’.
